- 2 Tbsp English Mustard
- ProQ Beefy BBQ Rub
- 2kg Beef Roasting Joint (Topside or Sirloin)

METHOD
Step 1
Light your ProQ Smoker, take the beef roasting joint and lightly rub it all over with English Mustard, then season all sides with a mix of finely ground black pepper and salt, or our ProQ Beefy BBQ Rub.
Step 2
Place directly on the smoker grill once the temperature is at 225°F (100°C). Add your ProQ Smoking Wood Chunks with the water pan in place. Check the smoker every hour or so and top up your fire and water if needed.
Step 3
Remove the joint when it reaches your desired internal temperature: Rare 125°F (51°C), Medium Rare 135°F (57°C), Medium 145°F (62°C), and Well Done 155°F (68°C). Allow to rest for around 30 minutes.
Step 4
Serve and enjoy.
