INGREDIENTS
- 1 Whole Chicken
- 2 Tbsp Olive Oil
- ProQ All Purpose BBQ Rub

METHOD
Step 1
Light your ProQ Smoker and score the chicken across the top of the breasts, legs and thighs.
Step 2
Drizzle the chicken with olive oil and massage in a generous coating of ProQ All Purpose BBQ Rub or try our basic BBQ Rub Recipe.
Step 3
Place the chicken directly on the smoker grill or in a ProQ Rib and Roasting Rack. Bring the temperature up to 105°C / 225°F and add 2 - 3 ProQ Smoking Wood Chunks. Check the smoker every hour and top up your charcoal and water as needed.
Step 4
Once the internal temperature of the breast reaches 96°C / 205°F, remove the chicken from the smoker. Using gloves or forks, pull the meat away from the bones, discarding the skin and bones.
Step 5
Mix the pulled chicken with your favourite BBQ sauce and serve it piled high in rolls with your choice of garnish and a little extra sauce on top.
