INGREDIENTS
- 1 Whole Chicken
- 2 Tbsp Olive Oil
- ProQ All Purpose BBQ Rub

METHOD
Step 1
Light your ProQ Smoker and score the chicken across the top of the breasts, legs and thighs.
Step 2
Drizzle with olive oil and massage in ProQ All Purpose BBQ Rub, or try our basic BBQ Rub Recipe.
Step 3
Place directly on smoker or use our ProQ Rib and Roasting Rack and bring the temperature up to 225°F. Add your ProQ Smoking Wood Chunks, and if you have one set your ProQ Smartfire for a smoker temperature of 200°F min. 250°F max, and your meat for 190°F. Check the smoker every hour or so and top up your fire and water if needed.
Step 4
When the chicken breast reaches an internal temperature of 190°F, remove from the smoker and using gloves or a fork, pull the chicken off the bones and separate them.
Step 5
Add BBQ sauce and mix well, before scooping onto your bread rolls with some garnish and more BBQ sauce.
