Courgette Skewers
These grilled courgette kebab skewers are simple, full of smokey salty flavour and make for a great barbecue side, especially lamb.

METHOD
STEP 1
Fire up your Flatdog or barbecue – you probably won’t be going for long but you do want it to be hot so a full chimney starter of glowing coals should be right.
STEP 2
Cut each courgette in half longways and carefully thread the courgette halves onto your skewers – we use flat metal skewers. Lightly score the flesh, apply butter to the scored flesh (flat side) and season generously with salt and paprika or our ProQ Herbylicious BBQ Rub.
STEP 3
When the grill is good and hot, place your courgette skewers (skin side down to start) onto the grill or over the fire. Turn regularly with tongs and cook until the skin is nicely charred. Check for doneness – the skewers will easily slide out of the courgettes.
