Hot Smoked Mussels With Pancetta
Hot smoked mussels absorb loads of flavour whilst cooking and pair perfectly with seasonal summer vegetables and salty pancetta cooked in the grill basket. This recipe completely reinvents the idea of Moules Mariniere with a radical ProQ twist and luxury splash of prosecco. Perfect garden party meal to enjoy this summer with a glass of bubbly.

INGREDIENTS
- 1KG Mussels
- 250g Pancetta
- 400g Heritage Tomatoes
- 1 leek, Roughly Chopped
- ½ Hispi Cabbage, Shredded
- ½ Red Onion, Roughly Chopped
- 4 Cloves of Garlic, Diced
- 1 tbsp Parsley, Roughly Chopped
- 6 Sprigs of Thyme
- 3 tbsp Olive Oil
- 100ml Prosecco or White Wine

- 1KG Mussels
- 250g Pancetta
- 400g Heritage Tomatoes
- 1 leek, Roughly Chopped
- ½ Hispi Cabbage, Shredded
- ½ Red Onion, Roughly Chopped
- 4 Cloves of Garlic, Diced
- 1 tbsp Parsley, Roughly Chopped
- 6 Sprigs of Thyme
- 3 tbsp Olive Oil
- 100ml Prosecco or White Wine
METHOD
STEP 1
Start by chopping your red onion, leeks and garlic. Then toss in a large bowl with pancetta, cabbage, herbs and plenty of olive oil. Season with a pinch of sea salt and plenty of cracked black pepper. Throw this into the smoking & grilling basked over a hot fire to cook. Turn after 3 mins with some tongs and cook until crispy. Meanwhile chop your heritage tomatoes ready to add once the pancetta is cooked.
STEP 2
Remove your crispy hispi, pancetta and leeks from the grill basket and transfer to a cast iron pan with the tomato. Add hickory wood chunks into the base of your smoker and pop the lid on. Allow the smoke to build up whilst you prepare your mussels.
STEP 3
Debeard your mussels and remove any that remain open while you are picking through them. Then Add the mussels into your pan on top of your vegetables and pancetta. Pour some prosecco over them and allow to hot smoke for 6 - 8 mins until the mussels fully open.
STEP 4
Serve the dish with sourdough and some freshly chopped herbs to garnish.
