METHOD
This recipe calls for your BBQ smoker to be set up in a couple of ways. Firstly we want to add some smoke to the Lamb Ribs, running the barbecue at 225°F/110°C, with water pan in. To finish off we'll be grilling directly over the fire to make sure the fat renders.
Step 1
Score the skin well, then liberally coat the lamb ribs with olive oil.
Step 2
Apply your favourite BBQ rub - we recommend our ProQ Herbylicious BBQ Rub or any salty, herby rubs are ideal.
Step 3
Place the ribs on the top grill of your smoker, add a couple of ProQ Maple Smoking Wood Chunks to the fire for flavour and cook for around 45 minutes at 225°F/110°C.
Step 4
After 45 minutes, set up your bbq smoker for long distance direct grilling (by removing the water pan) or you can use our ProQ Flip'n Grate. Sear the lamb ribs until golden and tender.
Tip: Use a toothpick to probe the meat for tenderness, you'll know they are done when the toothpick slides effortlessly into the meat.
Step 5
Remove the lamb ribs and rest for around 15 minutes before serving.
